You said « aillet » ? its garlic which grown during winter and develops a delicated scented sprout, green and tender. The green couloured sprout looks like « cive » ( spring oignon, green oignon) or even leeks. Then a bulging close to the root will appear : it is the future garlic bulb. We cook « aillet » : both stem, the « white » part close to the root and the green leaves.
